Punjabi Palak Paneer Recipe

Palak Paneer is one of the most famous and loved North Indian dishes served in Indian restaurants. It is a very delicious and healthy vegetarian food made up of spinach and paneer. Palak or Spinach is a leafy green vegetable packed with protein, calcium, iron, potassium, magnesium, vitamin A and folate. Paneer is rich in proteins and low in calories.
The dish goes very well with Chapatti, Paratha, and Naan. Let me walk you through the recipe.

Ingredients for Palak Paneer-

Spinach leaves(washed)-250 gm
Paneer (cubes)-200 gm
Cumin seeds-1/2 tsp
Green chilli-3
Chopped ginger-1 inch
Garlic cloves -14 to 16
Chopped onion-1 (large)
Chopped tomato-1
Fresh cream or malai -2 tbsp
Turmeric powder-1/2 tsp
Red chili powder-1/2 tsp
Cumin powder-1/2 tsp
Coriander powder-1/2 tsp
Garam masala powder-1/2 tsp
Cooking oil-4 tbsp
Salt to taste

How to make Palak Paneer-

1. Boil spinach leaves in one litre of water and cooks it for 2 minutes, turn off the flame.

2. Drain the water, take out the boiled spinach in a blending jar and keep it aside.

3. Heat oil in a pan, add cumin seeds, green chili, ginger, garlic, and onions. Fry it on medium flame till it turns light brown(2-3 minutes).

4. Add chopped tomato, cook on medium flame till it turns little soft (2-3 minutes). Turn off the flame and let it cool down.

5. Now take out this fried ingredients in the boiled spinach blending jar.

6. Add little water and blend it into a thick smooth paste, keep it aside.

7. Heat oil in the same pan, add turmeric powder, red chili powder, coriander powder and cumin powder.

8. Fry it for 20-30 seconds, add the prepared paste, keep stirring.

9. Cover the pan and cook it for 2-3 minutes on low flame.

10. Add fresh cream and paneer cubes, mix it well with gravy.

11. Add garam masala powder and salt to taste, mix it well.

12. Cover the pan and cook it for 2 minutes on low flame, turn off the flame.

13. Garnish with fresh cream and grated paneer. Palak paneer is ready!

Rice Moong Dal Khichdi in a Pressure Cooker

Khichdi is one of the healthiest protein-packed dishes made from rice and lentils (dal). It is made all over India in different regions with a different style. It is also known by different names and can be made differently.  It is served with ghee, papad, kadi and pickles or achar.

Rice Moong Dal Khichdi is the simplest food often made in the Indian kitchen. Any kind of Dal - moong dal or Toor dal can also be used in making khichdi. Since moong dal is nutritious, light and easily digestible, it is mostly preferred to make khichdi. Moreover, it is also consumed during times of sickness.

Ingredients for moong dal khichdi-

Ghee - 1 tbsp
Cumin/jeera - 1/2 tbsp
Curry leaves or bay leaves - 1
Ginger paste - 1 tbsp
Onion - 1
Tomato chopped - 1/2 cup
Red chili powder - 1/2 tbsp
Turmeric - 1/2 tbsp
Green chili slit - 1
Salt - as needed
Rice - 3/4 cup
Moong dal - 3/4 cup
Water - 2 1/2 cups

Preparation: Wash rice and moong dal twice and drain out water completely. Chop onions and tomatoes.

How to make Rice dal Khichdi -

1. Heat ghee in a pressure cooker.

2. Allow cumin seeds to crackle and saute bay leaves.

3. Add ginger paste let it cook until fragrant.

3. Add onions and cook until raw smell goes.

4. Add tomatoes, salt, turmeric powder and mix well.

5. Add chili, red chili powder and cook for 2 mins.

6. Now it's time to add drained rice and moong dal, fry for 3 mins.

7. Pour water and pressure cooker for 2 whistles until water evaporates.

8. Let the cooker cool down and serve Rice dal khichdi with ghee, papad, pickle or kadi.
